The color is always very light, ranging from almost colorless to straw-colored. Fine floral flavor, decidedly sweet with very light acidity, generic of honey and new and slightly fruity wax.

The aroma is very delicate, not very persistent and has no aftertaste, slightly vanilla and sugared, reminiscent of sweet peeled almonds.

Acacia honey is generally liquid, may eventually appear cloudy due to the formation of crystals without never reaching complete crystallization.
