At the meeting on October 4th, titled "LAJATICO IS...Guardians of Time," organized by the municipal administration of Lajatico (PI) at the local theatre, several sessions addressed topics ranging from the importance of preserving structures like the Rocca di Pietracassia, which tell the story not only of the events but also of the hydrogeology of an area, to the importance of protecting the environmental biodiversity so unique to the Lajatico area, so much so that it supports the existence of the special local bee, the linguistica, which thrives here in a healthy and protected environment. This was true, at least until recently.

These were the themes of the conference held today in Lajatico (PI) at the Teatro Comunale, under the patronage of the municipal administration.

In this crazy spring, alternating between summer heat and cold and rain, where climate change is impacting our lives, we increasingly find ourselves walking through gardens and parks where the city's greenery hasn't been properly mowed.

Having concluded a few days ago in Florence the 2025 edition of the taste fair par excellence, where - in nom omen - tasting is the fulcrum of the event, the 'Taste' exhibition organized by Pitti Immagine at the beginning of February this year, brought with it many innovations in the world of food which have resulted in yet another appreciation by an increasingly varied audience of professionals and non-experts.
